Today I am highlighting chef Matt Dillon, owner of the upscaled restaurant and wine bar Sitka and Spruce, located in Seattle, Washington. As another chef I truly admire, Matt shares similar beliefs and values as his Portland neighbors highlighting local ingredients, hearth cooking, and farm-to-table gourmet dishes that also reflect and concentrate on the seasons of the Pacific Northwest in a rustic-chic setting.
